Aubergine

Aubergine is an edible fruit plant generally annual, of the Solanum type within the Solanaceae family. The aubergine is considered native of India according to countless written documents that place it in this country and other neighboring. In fact, the cultivation of this vegetable is ancient in East regions. It seems that its name comes from Persian word 'badindjan', and then passed into Arabic.

Aubergine quality is based on uniformity, firmness, peel colour and size. Generally, the tastiest aubergines are the most tender and firm, with smooth and shiny peel, dark purple colour and increased weight in accordance with its size. The peel should not have spots.
