Radicchio

Cichoriumintybusvar, foliosum, common name radicchio, is a variety of chicory which forms thick sprouts, usually of purple colour. Cultivated mainly in Italy, is highly appreciated in gastronomy. Radicchio and red chicory are vegetables of very ancient origins. Since antiquity it is thoroughly known in Italy in the market of fresh cut products and has a wide variety of shapes and colours.
