Persimmon, also known as Rosewood, is a tropical fruit that belongs to the Ebanáceas family. There are different species of consumption, size and distinct taste, among which are: the China persimmon (D. Kaki), the Japanese (D. Lotus) and the American (D. Virginiana). The most cultivated is the China one, with a weight of between 80 and 250 grams depending on the variety. It can be red or orange or yellow, depending on its content in carotenoids, and on orange, sweet and juicy pulp with a slight rough aftertaste depending on tannin content.
